Recently my son asked me to make him a Mango Thai cake. I think next time I’ll be trying this recipe instead with the Mango that is on sale! This mango icing looks super yummy and easy! I mean seriously, mango and cream. I think a simple coconut cake with mango buttercream icing would be a wonderful dessert to have on our back deck on a hot summer day!

Egg prices continue to rise

Recently I noticed at our grocery store recently that a dozen eggs here are currently $6.49. Yes, you read that right. $6.49. Now those were for organic eggs but still, I remember a year ago those same eggs were $4 a dozen. Thankfully I have our laying hens but we love using freeze-dried eggs for pancakes, scrambled eggs or cake mixes when our girls are not laying! (like the winter months)
